Red Pesto

This recipe is made with sun dried tomatoes, roasted peppers and parmesan cheese.  It has such a vibrant colour and goes so well with pasta and makes a wonderful pizza topping instead of the usual tomato base.

  • Place the sun-dried tomatoes, roast pepper, garlic, basil, parsley and Parmesan into a blender and blitz. Gradually pour in the sun-dried tomato oil until you have your desired consistency. If needed add extra virgin oil until you have a smooth paste. Season to taste.
