This is a wonderfully creamy Tuscan chicken pasta with sundried tomatoes, garlic, Parmesan and spinach. A delicious comforting pasta dish made in 30 minutes – the perfect mid week meal.
- Heat the oil in a large frying pan on a medium high heat. Season the chicken and add to the pan, cook on both sides and set aside. When slightly cooled cut into bite sized pieces.
- Reduce to a medium heat. Add the butter to the pan, with the sun dried tomatoes, spinach, cherry tomatoes and garlic. Stir through the ingredients and allow the spinach to wilt.
- Now add the cream until it begins to simmer. Remove from the heat and add the Italian seasoning and Parmesan, stir through.
- Now stir through the cooked pasta and chicken, it is now ready to serve. Enjoy!
