This Madeira cake recipe is very easy to make, delicious and trusted! This is not the most traditional recipe but it is light, soft, moist with a firm texture – made using oil instead of butter. Perfect for everyday baking or can be decorated for occasions.
- Preheat the oven to 200°C/180°C Fan/Gas Mark 6 - grease and line a 23cm springform cake tin.
- Place the sugar, vegetable oil, vanilla extract, orange juice, zest and eggs into a mixer and mix for 2-3 minutes on medium speed, until well combined. Now add the sultanas and mix through.
- Sift the flour and baking powder into the mixture and gently fold through until fully combined. Pour into the prepared cake tin.
