This has to be the best Scampi that I have ever tasted. The scampi was gifted by Bradley’s – see a discount code below. This is a delicious recipe – best served with tartare sauce and homemade chips.

Instructions
- Pat dry the scampi with kitchen paper. Season the flour with salt & pepper and a good pinch of cayenne pepper. Now dust the scampi in the seasoned flour, dip to coat in the egg, then roll in the breadcrumbs.
- Heat the oil in a large high-sided pan or deep fryer to 190°C, or until a scampi-size piece of bread turns golden brown and crisp in 2 minutes. Add the scampi with a slotted spoon, cooking in 3 batches, for 2-3 minutes for each batch. Remove and drain on kitchen paper. Serve with the tartare sauce, chunky chips and lemon wedges.
