Festive Salmon

This festive salmon is a delicious crowd pleaser for over the Christmas holidays.  This whole side of salmon is baked in a stunning pomegranate and maple glaze, it is so quick and easy to make.

  • Preheat the oven to 180°C/160°C Fan/400°F/Gas 5.
  • In a pan melt the butter and add the pomegranate molasses, maple syrup, dried rosemary, salt and pepper. Bring to the boil for 4-5 minutes and allow to cool.
  • Place the salmon on a lined baking tray and pour over the glaze until covered. Place in the oven and allow to cook for 15-20 minutes until cooked through and flaking. The cooking time will depend on the size of the fillet. Drizzle over some of the glaze that has ran off the salmon.
  • Place on a serving plate and decorate with the rosemary sprigs by placing them around the salmon and scattering the pomegranate seeds on top. Serve with seasonal vegetables and roasted potatoes. Enjoy!
