  • Heat the oil or ghee in a large frying pan or casserole. Add the onions and fry until golden.
  • Stir in the turmeric, coriander, cumin, chilli powder, cloves and curry leaves and fry for 1-2 minutes. Add the lamb and coconut and fry, stirring, until well browned.
  • Pour in the boiled water and add the salt. Cover and simmer for 45-60 minutes or until the lamb is tender.
  • Transfer to a warmed serving dish and serve immediately. Enjoy!
