A rich and aromatic curry inspired by the flavours of South India, this Lamb Malabar is made with tender lamb simmered in a spiced coconut sauce with curry leaves, turmeric, cumin, and chilli. Creamy, fragrant, and full of depth, it’s perfect served with basmati rice and warm naan bread.

Instructions
- Heat the oil or ghee in a large frying pan or casserole. Add the onions and fry until golden.
- Stir in the turmeric, coriander, cumin, chilli powder, cloves and curry leaves and fry for 1-2 minutes. Add the lamb and coconut and fry, stirring, until well browned.
- Pour in the boiled water and add the salt. Cover and simmer for 45-60 minutes or until the lamb is tender.
- Transfer to a warmed serving dish and serve immediately. Enjoy!
