Lamb Steaks with Mint & Lemon Pesto

This is a delicious quick & easy meal that can be made in less than 30 minutes.  The fresh mint pesto is full of flavour and is a great alternative to mint sauce.

    For the pesto
  • For the lamb

  • For the pesto, place the pine nuts, mint, parsley, lemon zest, Parmesan, mint sauce and oil into a blender. Blitz and season to taste, you can add more mint sauce to your liken and set aside.
  • For the lamb steaks, heat a large frying pan over a medium to high heat and drizzle with oil. Season the steaks and fry for 3 minutes each side (for medium) if you prefer well done cook for a further 1 to 2 minutes. Allow the steaks to rest for a few minutes.
  • Serve the lamb with seasonal vegetables and a good dollop of pesto. Enjoy!

Notes

Stir the mint pesto through new potatoes for a super delicious side dish!
