This Sausage, Potato, Vegetable & Gravy Traybake is the ultimate easy comfort meal. Juicy sausages roast with herby potatoes, carrots, and onions, all finished with a rich homemade gravy and topped with greens. A hearty one-pan dinner that’s full of flavour and perfect for busy evenings.

Instructions
- Preheat the oven to 200°C/180°C Fan/Gas mark 6. Place the potatoes, carrots, onions, garlic, oil, herbs and seasoning into a large bowl and toss everything together. Now add the sausages and toss through.
- Now add to a roasting tin, place the vegetables at the bottom and top with the sausages.
- For the gravy, add the flour to the melted butter and whisk through, now slowly add the beef stock
- Pour the gravy around the edges of the roasting tin. Now place in the oven and bake for 25 minutes. Turn over the sausages and return to the oven for a further 20 minutes or until the sausages are browned and the potatoes are cooked through. If the gravy is very thick add a splash of boiling water. Or if too thin, remove the sausages and vegetables and return the gravy to the oven for 5 minutes or until thickened.
- Top with the greens and serve the sausages with the vegetables and gravy - enjoy!
