Broad Bean, New Potato & Tuna Salad

  • For the dressing

  • Bring to the boil a pan of salted water and add the new potatoes, boil for 8-10 minutes until tender. Drain the potatoes and place in a bowl of iced water.
  • For the dressing, whisk together all the ingredients, season to taste.
  • Place the broad beans, potatoes, onions, tomatoes and tuna into a large bowl. Drizzle with the dressing, gently toss, serve with rocket, enjoy!

    1. Hi, I used ready to eat broad beans. If you shell them yourself, tip the podded beans into a pan of boiling water and cook for two minutes. Drain and cover with cold water to cool, then drain again and peel the outer skin from the beans. I hope you enjoy the recipe. Best regards, Victoria
