Place the chicken thighs and marinade ingredients into a zip lock bag and massage all the ingredients into the chicken. Allow to marinade in the fridge for 30 minutes to 2 hours.

Preheat the oven to Gas mark 5/200°C/180°C fan. Line a baking tray and bake in the oven for 45-50 minutes, basting occasionally until the chicken is browned and crispy. Remove from the oven and set aside to rest.
- Meanwhile put the onion, tomatoes, rocket and olives into a salad bowl and season to taste.
- Scatter with the mozzarella and toss through. Now drizzle over the oil. Serve the salad with the chicken, enjoy!
